4 Ingredient Healthy Fudge + 2 flavour options

Healthy fudge recipe with only 4 ingredients? Yes please! This 4 ingredient fudge is made with natural ingredients, gluten free, refined sugar free and vegan. Because dessert can be healthified!

This week at work we held our annual Cancer Council Australia’s Biggest Morning Tea to raise much needed funds for cancer research, education and prevention. An organisation that is no doubt close to many of our hearts.

Everyone at works get involved in a “bake off” competition about who’s dishes look and taste the best. Last year we also had a “healthiest” award, which I won… of course! haha. So yes each year I make something gluten free, refined sugar free and as nutritious as I can. Because I love to show everyone that desserts and treats can be healthy too!

There are so many scrumptious dessert recipes we can make that use good quality nourishing ingredients, filled with micronutrients, antioxidants and fiber, and avoid processed ingredients and empty calories (like my Raw Vegan Raspberry Cheesecake Bites!). I opt for recipes that contain good quality healthy fats like coconut oil or olive oil or nuts. Recipes with a source of protein like eggs, nuts and legumes (black bean brownies are amazing!), or even add in a protein powder. And even recipes that hide vegetables in desserts (carrot, pumpkin, beetroot, zucchini all make incredibly desserts!). This all helps to stabilise our blood sugar levels and avoids a sugar spike and crash that processed, refined carbs desserts do. I don’t know about you but sugar makes me so jittery and nauseous (probably because I don’t usually eat it), and I don’t enjoy a big sugar crash afterwards. It is known that refined sugar also affects our gut health, immune, brain, heart, mood, hormones, and waistline.

This healthy fudge is gluten free, dairy free and vegan. I made 2 separate batches of fudge in 2 different flavours (recipe for both flavours below), layered them and drizzled with melted dark chocolate. Cut into little bite sized pieces (portion control game strong here!) and keep in the fridge or freezer until ready to eat.

    Coconut Fudge
  • 2 cups desiccated coconut (unsweetened)
  • 1 tablespoon 100% pure maple syrup
  • 3 tablespoons coconut oil (unrefined), melted
  • pinch salt

  • Chocolate Peanut Butter Fudge
  • 1 cup organic peanut butter
  • 1/2 cup raw cacao powder
  • 1/2 cup desiccated coconut (unsweetened)
  • 1 tablespoon 100% pure maple syrup

    You’ll be making each fudge flavour separately (Coconut Fudge & Peanut Butter Fudge).

  1. Starting with the ingredients for the Coconut Fudge, put coconut in a high powered food processor and blitz until creamy. Add in maple syrup, coconut oil and salt. Blitz again until creamy and sticky.
  2. Line a small baking tin or container with baking paper and pour/spoon fudge mixture in. Press down with the back of a spoon and smooth the top.
  3. Refrigerate for 1 hour until set (or freeze for 15 minutes).
  4. Meanwhile, make the Chocolate Peanut Butter Fudge. Put all ingredient for this flavour into a high powered food processor and blitz until creamy.
  5. Once Coconut Fudge layer has set, pour in Chocolate Peanut Butter Fudge over the top as a second layer. Smooth down using the back of a spoon.
  6. Refrigerate for 1 hour until set (or freeze for 15 minutes).
  7. Option: make a batch of my Homemade Chocolate and spread over the top to decorate.
