Chilli Lime Tuna Patties (gluten free)

Loving these tuna patties for healthy and easy meal prep lunches, snacks or a mid-week dinner. Made with Sirena Chilli Tuna for a little spicy kick, zesty fresh lime, gluten free bread crumbs and I even snuck in added veg for extra micronutrients. Serve it up with a big side salad and guacamole, or my Green Goddess Dressing, or make it into a delicious burger.

Chilli Lime Tuna Patties (gluten free)

Healthy and easy to make tuna patties packed with chilli and zesty flavours. These patties are gluten free and perfect for meal prep lunches or mid-week dinners.

Ingredients:
  • 2x 95g tin Sirena Triple Chilli Tuna
  • 1/2 small red onion, finely diced
  • 1 small clove garlic, finely diced
  • 1/2 cup chopped spinach
  • 1 small carrot, grated
  • 2 eggs
  • 1 slice gluten free bread, blitz or break into large crumbs
  • 2 tbls psyllium husk
  • zest & juice of 1/2 lime
  • 2 mint leaves, finely chopped
  • salt & pepper, to taste
  • Extra Virgin Olive Oil, for cooking

Instructions:
  1. Prepare all ingredients, and put into a large mixing bowl. Mix well until combined.
  2. Shape mixture into 6 patties (best set aside for 15 minutes so the patties hold their shape when cooked).
  3. Heat a non-stick pan on medium-high heat.
  4. Add a splash of Extra Virgin Olive Oil.
  5. Cook patties for 3-5 minutes per side, unti cooked through.
  6. Serving suggestion: side salad & guacamole
